Obituary for Pat Hall Simon

Patsy “Pat” Cummins Hall Simon, 75, passed from this earth on July 2, 2021 after a very brief fight against an extremely aggressive form of dementia. Funeral services will be at 10:00 A.M. on Friday, July 9, 2021 at Bell Avenue Church of Christ in Amarillo, Texas, with graveside services following at 3:00 P.M. at Claude Cemetery in Claude, Texas. The family will receive friends from 6:00 to 7:30 P.M. on Thursday, July 8, 2021 at Brooks Chapel in Canyon, Texas.

Pat was born in Hollis, OK on March 3, 1946 to Forrest Ray Cummins and Medie Lorene McCubbin Cummins. She was the baby of the family and possibly a little spoiled. The Cummins family eventually moved to Amarillo, Texas where Pat graduated from Palo Duro High School. The day after she graduated, May 29, 1964, she married the love of her life, a tall, handsome, drink of water, Elmer D. Hall, better known as Ed. Together they raised two ornery boys. They enjoyed camping, road trips in the big rig, attending bluegrass festivals, watching their boys play sports and spending time with friends and family.

While in Claude, Pat worked for Claude ISD as the Food Service Director for 20 years. In this role she poured her heart into making sure the food she and her ladies prepared was just like a home cooked meal. Pat was a phenomenal cook and was known around the county for all of her tasty treats.

She attended the Church of Christ in Claude where she was very involved and always giving of her time to help prepare funeral meals, vacation bible school meals or whatever else needed to be done.

After losing Ed in 2001 and spending several years alone, Pat was introduced to James “Jim” Simon, and they became inseparable. They married on April 28, 2006 and moved to Amarillo, Texas where they attended Bell Avenue Church of Christ. Again, Pat used her servant’s heart to prepare many meals and treats for different events at the church.

In addition to cooking, Pat also enjoyed sewing and spending time with family, listening to music, playing games, or just visiting. She was the World’s Best Granny and loved to share her passion for cooking and sewing with her grandchildren. When grandkids walked into Granny’s house, they immediately knew they might get exactly what they wanted between home-made goodies, Disney movies, and lots of cuddles. She loved her grandchildren dearly!

Pat was preceded in death by Ed Hall, her son Ken Hall, her parents, and Jim Simon.

Survivors include her son Mark Hall and wife Chris of Canyon, grandchildren Kelsey and Kolby Hall, McKinsey Ogle, Kayla Stokes, and 3.5 great grandchildren, sisters Sue Hollingsworth of Canyon, Tempie Batten of Lubbock, brother Dan Cummins of Amarillo, numerous nieces and nephews as well as the children and grandchildren of Jim Simon.

The family would like to thank Virginia Green and her staff at Privileged Care Home for their dedicated, compassionate, and loving care of Pat in her last weeks here on earth.
